Cookies conjure images of warm kitches, grandmas wearing aprons, and
tall glasses of cold milk. Do these visuals relax you? If so, we're so
happy to share one of our favorite family recipes with you.
(If baking makes you tense, we strongly encourage you to find someone who will bake these for you!)
Barbara's Molasses Cookies
3/4 cup (1 and 1/2 sticks) unsalted butter, softened
1 cup light brown sugar, packed
1 egg
1/4 cup molasses
2 1/4 cups unbleached flour
2 teaspoons baking soda
1/4 teaspoon salt
1/2 teaspoon ground cloves
1 teaspoon ginger
1 teaspoon cinnamon
1/2 cup white sugar (for coating cookie dough before baking)
1. In a large bowl, combine butter, brown sugar, egg, and molasses. Mix well with an electric mixer.
2. In a medium bowl, sift or whisk together next six ingredients (flour
through cinnamon). Add to butter mixture and mix until combined. (Start
slowly at first with the mixer to keep flour from "dusting" you.")
3. Chill dough at least 30 minutes, longer if possible.
4. Preheat oven to 375 degrees.
5. Roll dough into balls or use a rounded cookie scoop. (Size is up to
you, though we typically use a rounded tablespoon of dough per cookie.)
Roll balls in white sugar.
6. Place balls on a parchment-lined baking sheet, about 2 inches apart.
Bake for 10 minutes at 375. Remove from oven and let rest on sheet for
2 minutes. Transfer to cooling rack. |
